I completely understand your point. But then people have different levels of tolerance and patience.
Over time i have observed that tolerance people have against pain or difficulty is one of the factors that affects OS/Tools one can and can't use.
Sweta(my wife) uses OS X(snow leopard), and she is perfectly fine with it. She doesn't have tolerance and patience to use Windows, but she has enough for Mac.
Then there are other set of users that have enough tolerance to handle pretty much anything(i know people who are happy with windows command line(without TAB auto-completion enabled), and they just don't find it painful).
I believe im worst of the lot. I zero tolerance and negative patience(you may or may not believe that i hate gnome-terminal tabs for occupying too much space, i use screen for multiplexing in full screen terminal window in X)

Lets get to answer your points:
- Meta = alt/option on the mac keyboard.

In Terminal(on OS X)(running bash), try Alt/Option + b (it shd take you to the beginning of word and then beginning of the previous word and so on). Instead, what is does is print some weird characters. Who wants wierd characters while in bash?

- Rebind capslock (in system prefs) to ctrl, seriously, who wants to press even a normal size ctrl button way down there?

I must admit i didn't know that swap thing until i got my wrist injured. What i do not understand is "Why does mac have such a tiny Ctrl key???"(it just frustrates me). Why doesn't it have a big Ctrl key like other laptops do(on a Dell D630 for example, swapping Caps and Ctrl is not necessary, because Ctrl is big enough by itself)?

- the rest? pfft. compile stuff yourself if ports doesn’t have what you want. who cares about java? every pixel on your display? get over it.

I have had problems with versions Mac ports repo pushes(lets not talk about stability because sometimes it doesn't even compile). Java, well i had to care about it since it was my work laptop and i had a genuine case where java 6 was required(i don't love java or something, just that it was required for some urgent office work). Every pixel on the display, well i could let that go provided everything else was smooth(but like i said, things weren't).
